硬脂酰乳酸鈉
Sodium Stearoyl Lactylate, SSL
Sodium Stearoyl Lactylate (SSL) is a versatile, FDA-approved food additive used to improve the mix tolerance and volume of processed foods. It's one type of commercially available lactylate, non-toxic, biodegradable, and typically manufactured using biorenewable feedstocks. SSL is used in a wide range of products, from baked goods and desserts to pet foods, due to its safety and efficacy as a food additive.

The use in food
Enhances mix tolerance and volume of processed foods.
Acts as an excellent emulsifier for fat-in-water emulsions.
Serves as a humectant, helping to maintain the moisture content of food.
Source
Manufactured by the esterification of stearic acid with lactic acid and partially neutralized with either food-grade soda ash (sodium carbonate) or caustic soda (concentrated sodium hydroxide).
Globally Harmonized System of Classification and Labelling of Chemicals
SSL has undergone extensive safety evaluations before being approved by the FDA for use as a food additive.
A study in 2010 established the no-observed-adverse-effect level of SSL at 5% of the total diet, recommending an acceptable daily intake of 22.1 mg/kg bw/day for humans.
