Potassium Phosphate / Tripotassium Phosphate

Tripotassium Phosphate, with the chemical formula K3PO4·(H2O)x (x = 0, 3, 7, 9), is a water-soluble salt that is basic in nature. It is produced via the neutralization of phosphoric acid with potassium hydroxide: H3PO4 + 3KOH → K3PO4 + 3H2O. This compound has limited applications in organic chemistry, mainly serving as an inert, easily removed proton acceptor to catalyze a variety of organic synthesis reactions.

The use in food

Acts as a buffering agent, emulsifying agent, and for nutrient fortification.
Serves as a sodium-free alternative, potentially substituting trisodium phosphate.
Most commonly found in dry cereals but also used in meat, sauces, and cheeses.
