Acting as a fungicide and bactericide to maintain product stability and extend shelf life in cosmetics.
Its sodium salt form, sodium dehydroacetate, is often used instead due to its higher solubility in water.

The use in food

Serves as a food preservative to prevent bloating in pickled squash and strawberries.
Referred to by the International Numbering System for Food Additives or E number 265 when used as a food additive.


Prepared by the base-catalyzed dimerization of diketene, using organic bases such as imidazole, DABCO, and pyridine.
This method of preparation allows for its use in various industrial applications, including as a plasticizer in synthetic resins, an antienzyme in toothpaste, and a precursor for synthesizing dimethyl-4-pyridones.
